Last week I helped Steve make the easiest pickles ever, and they taste so good, I had to make more for my family!
I was up early to clean jars and Persian Cucumbers. Got the jars all ready for the brine and couldn’t find a recipe that matched what I did for Steve’s pickles, so I had to call him... He saved the day! And the pickles tooo!
Easy Window Pickles made with Persian Cucumbers!
[NOTE" Persian cukes are about the size of a typical dill pickle. We have only found them at Trader Joe's (Folsom), but obviously any grocery store coke will work if you make dill chips.\EXTRA NITE: These will taste odd at first. Why? Because they actually are flavored with DILL! Grocery store dills have no real dill.
Wide mouth Quart jars Lids & Rings 4-6 Persian Cucumbers 3 Sprigs Fresh Dill (Per Jar) 1T Minced Garlic (Per Jar) 10 Whole All Spice (Per Jar)
Brine 1C Water (Boiling) 1T Pickling Salt 1T Braggs Apple Cider Vinegar
1) Wash jars, lids, and rings. No need to boil, this is short term, pickles won’t last long after ready. 2) Cut ends off cucumbers, slice long ways (or however you want to eat them), and place in Jar. 3) Add Dill Sprigs in between. Once Jar is filled, add Minced Garlic and Whole Spice cornels on top. 4) Prepare brine 1 cup at a time to insure no waste, and pour into cucumber filled jars, leaving a half inch at top for air. 5) Put kid and ring on Jar and invert 5-6 times to mix all ingredients well; then loosen ring so lid can let gases out. 6) Place in SUNNY windowsill for 72 hours. 7) Remember to tighten ring and invert 5 times and loosen ring again every 24 hours. 8) After 72 hours, do not tighten ring yet, place Jar in refrigerator to cool. The next day, EAT’M UP!
