What fun! A) The weather is cold and rainy, so np waterskiing this weekend. B) The strawberry harvest is in full swing, and I was drawn in to a conversation about strawberry shortcake! and C0 I felt capable of trying to make some Bisquick shortcake things. Are they just biscuits? Seemed like a goodness, how hard could it be?
Off to the store for a box of Heart-Healthy Bisquick, 'cuz I am not willing to die for a few bites of shortcake. With a white box of Bisquick and a few pounds of strawberries* in the trolly (too much BBC Radio? Sorry,...cart), off to pay and off to cook.
This morning I confidently opened the Bisquick, got out my trusty magnifying tool, and saw that back of the box are nicely designed with images of vicious strawberries* next to the recipe. I could make out the two cups, I was pretty sure it said 1-1/? (half? quarter?) and one egg. Add all to a bowl and mix. No problem.
Well, problem! I did what it said, even splashing in a bit of milk** to be sure. It didn't take but a minute or so to realize something was wrong. I was making soup, not biscuits. Not my plan/ I check the recipe, saw I was close enough for government work, and called my cookery hotline,...my brother-in-law Tom, a champion Bisquick wrangler.
Tom was gracious enough to point out that the powdery product is clearly labeled "pancake AND biscuit mix. Yes, I got that. Then he pointed out that the neat strawberry images were sitting atop...pancakes.
Damn! The biscuit recipe is on the side. I have been duped.
Back to the mixing bowl, discarding well more than half, then adding another scoop of magic powder. Some stirring and soon enough I had a thick paste. Now we're talking put a big limp into my pan to place in the Air-Fryer. Seven minutes at 400°, DING! Ready for inspection.
Result looks good Seems to be the right color, I'm sure it will be fine. And I have the other half of the dough ready as a back-up. I am squared away.
I feel so accomplished.
* Strawberries are not berries! They are aggregate fruits! The little brown bits are the external seeds. As a bonus bit of fun, an avocado is a berry, and a jalapeño is a berry. Technical botany here, but it is true. And no, I won't be making any jalapeño shortcake.
** I use Almond Breeze. It really is more heart healthy than Bisquick's nutrition.
