Huh? Doesn't everyone know how to hard boil an egg?Probably so, but also probably not the best way. There are too many options to list, so here is the one path to perfectly hard-cooked eggs: First, note that it doesn't say boiled. Don't boil the eggs, boil the water and steam the eggs! Put the eggs in a steamer top on a pot, and bring water to a boil, then let the steam cook the eggs for 12 minutes. Cool the eggs in a cold water bath. Then crack the eggs, roll them along a counter to break up the shell, and discover that: 1) no eggs were cracked during cooking, and 2) the shell released easily without tearing off parts of the egg! Perfectly cooked eggs that peel so easily you won't believe it. Note that you can certainly boil the eggs in water, but steaming is the surprise. Read about this at the Food Lab
